  1. Heat a pan over high heat (about 1 minute)
  2. Season fish as desired
  3. When pan is heated, add two Tbsp of oil ensuring pan is thoroughly coated
  4. Put fish in pan skin side down making sure to drop away from you so as not to splash oil onto yourself. Turn down heat to medium
  5. Cook until the skin gets nice and brown (about two minutes). Flip onto flesh side
  6. Continue cooking until fish is med rare – medium (about one minute)
  7. Remove from pan. Garnish and serve
