Lemon Marmalade - West Side Beef

Lemon Marmalade


  1. Peel and juice 5 whole lemons. Put the peels to the side for later.
  2. Measure the juice that  you get from the lemons and add equal parts sugar and water, by volume
  3. Add the lemon juice, water and sugar to a pot and bring the liquid to a light simmer. Reduce the liquid by 2/3 so you have 1/3 remaining.
  4. Place the lemon peels in a pot of cold water and bring the pot of water to a boil. Once the water is boiling remove the lemon peels from the water.
  5. Repeat Step 4 two more times and be sure to start with cold water each time.
  6. Brunoise the blanched lemon peels.
  7. Finely chop 1 sprig of rosemary
  8. Combine the lemons peels and rosemary to the reduced lemon juice solution.
  9. Add a pinch of black pepper.
  10. Cool the marmalade in the fridge. Serve cold or at room temperature.
