Similar to flank steak, bavette is a very flavourful cut. It has a slightly looser grain allowing a marinade to penetrate even further, but is slightly thicker allowing for more a little more time on the grill to get a nice char. This steak is best cooked medium.
Heat a fry pan or grill to medium-high and cook for 3-4 minutes a side. Let it rest for 2-3 minutes and slice thin against the grain.
