Cooking A Turducken
If you’re cooking a WSB Turducken this holiday, it can be helpful to have looked through this post so you have an idea of what each step in the process will look like.
Is Michael Pollan Asking Me To Eat More Meat?
But is eating meat sustainable? This is a question I think about a lot. In fact, we talk about it a lot while we’re working in the meat locker. You might find that surprising, but we truly do put a a lot of thought into how we eat meat, why we eat meat, as much as we do what meat we should eat. I don’t have any brilliant revelations here, but Pollan’s work in the chapter on fire has prompted me to consider the positive role meat can play in our relationship with vegetables. Sure, we eat meat. And yes, there’s good reason to believe we eat meat because our ancestors learned that it’s easier to preserve, easier to digest, and our own cultural imperative to gather over the table stems from this history of cooking over the fire. But in turn this means we must consider the positive role that eating vegetables must play in our relationship to eating meat.
Why Does West Side Beef Sell Chicken?
The request we got more than any other from our faithful customers was: can you help me get great chickens? Again, the real answer here was yes. I’ve known John and Carol at Fenwood Farms for close to ten years and have visited their farm so many times. My family has been eating their chickens for just as long as I’ve known them. But at WSB, I always fought against the idea that we should get people chickens. Truly, I thought this was something our customers, all ambitious and talented home cooks, could handle without intervention. I mean, you can just go and get a whole chicken and butcher it yourself, right?
What is The Packing House and How Did It Start?
I am a firm believer that chefs and butchers are technicians of nature’s bounty. If there was ever an ideology to adapt from the Italian kitchen, it is that of respect for ingredients. Understanding the ingredient in order to unlock its full potential is my true goal with meat and cured meats. A good salami can be made with conventional pork. An excellent salami can only be made with excellent pork. So what is excellent pork?
How Does WSB Help Me Eat More Vegetables?
My wife and I are very loyal WSB customers. In fact, I can’t remember the last time I bought meat at a grocery store for my home use.
Why Can't I Choose What Comes in My Share?
The simple answer to why you can’t choose what comes in your share is that we don’t let you. The reason we don’t let you choose is because the farmer doesn’t let us choose.
How Does Buying Local Lower My Food Budget?
For a long time now, we’ve advocated for local families to support local food systems. During this time, local food prices have seemed high relative to conventional food prices as the global food conglomerates were able to sell food internationally without having to factor in the hidden cost of cheap labour and environmental degradation. But now that conventional food prices have started to soar, we all have the opportunity to see the real cost of imported fruit, vegetables and meat.
How Do I Utilize My Beef Fat?
Fat has always been one of the most confusing things to understand. Is it good for us or bad for us? Why is some of it liquid (vegetable oil) and some of it solid (coconut oil)? Indeed, what’s the difference between fat and oil? Why are some of them opaque while others are cloudy and still others are translucent?
How Did West Side Beef Get Started?
Sometimes you just want a steak. You don’t want to think about where it came from, how it was made, if it’s safe or full of antibiotics, ethical, local, dry-aged… All you really want is that first perfect bite – crispy on the outside, melting and pink in the middle.
